Royal Milk Tea for Two
Ingredients
3 TBSP black tea (loose leaf or bagged)
2 CUPS water
1 CUP milk (of your choice)
1-2 TBSP Honey (or sweetener) to taste
Using the cup you will drink from, measure 2 cups of water and bring to a boil in a saucepan.
In a different sauce pan, warm up 1 cup of milk (using the same glass) but do no boil. You'll be using 3 TBSP of tea all together. I used 2 TSBP of loose leaf chai, and 1 common black tea bag (cut open). Unceremoniously dump the tea leaves into the water.
Bring to a boil then turn the heat down to a light boil, and set a 3 minute timer.
After 3 min, kill the heat, and steep for another 1 minute.
After the minute is up, turn off the heat on the milk, and carefully pour the hot steeped tea into the milk saucepan, and then pour it all back into the tea pan.
You are trying to add fluffy air while helping to mix the tea with the milk. Do this two or three times, then put it back on the heat and bring up to a boil.
Kill the heat when the mixture starts to rapidly rise up towards the surface. Repeat the pouring back and forth between the pans again. And repeat putting it back on the heat again.
Give it a taste, if it isn't strong enough for your liking, let it simmer on the heat or turn off the heat and let it soak.
Get a strainer and pour the tea into your warmed glass and enjoy!
Add more sugar to your personal taste.
This is also amazing iced. And, it is great shaken in a martini shaker with ice and a shot of vodka or rum. Add a dash of heavy cream and some cinnamon or nutmeg too~
