Ramen Hacks
(Easy to hard)
HACK 1
INGREDIENTS:
1 fresh raw egg
1 tbsp mayo (Japanese Kewpie mayo is best)
1-2 garlic cloves
1 pack of soup mix
Toppings: green onions, sesame seeds, and soft-boiled egg
Optional: 1 tsp gochujang paste or sriracha hot sauce
Method
1. In the bowl you’re going to eat from, add a raw egg, mayo, garlic, and the ramen soup pack. Mix together.
2. Follow the timed directions to cook your ramen noodles.
3. Slowly add the boiled hot water from your starchy noodles onto the mixed mayo egg sauce, beating to cook the egg. If you add the hot water too fast, you might get scrambled eggs!
4. Add the noodles.
5. Top with green onions, sesame seeds, and a soft boiled egg to be easy fancy.
HACK 2
INGREDIENTS:
For the Soup Stock:
1 ramen soup packet
2 tbsp smooth peanut butter
1 tbsp white or golden Miso paste
1/2 tbsp sesame oil
1/2 tbsp toasted sesame seeds (ground)
1/2 tbsp rice vinegar or sushi rice
1.5 - 2 cups (300-500ml) boiling water (noodle water is okay)
Cook
For the Meat:
・1/2 cup (60g) ground/mince pork or ground meat replacement
・1- 1.5 tsp minced garlic
・1- 1.5 tsp minced ginger
・1 tsp green onions
・1/2 tbsp - 1 tbsp Doubanjiang (Chinese broad bean chili paste)
・1 tsp sesame oil
1. On medium heat, cook the pork and remove the excess fat.
2. Once the pork is no longer pink, add all the other ingredients listed, saving the sesame oil for last. Meat topping should be slightly crispy.
3. Remove from heat, you’ll be adding it to your ramen at the end.
OPTIONAL RICHER FLAVOURS TO ADD TO THE MEAT:
・2 tsp Sake
・2 tsp Soy sauce
・1 tsp Sugar
Optional Veg for Serving:
・Bok Choy or Spinach
・Green onions for topping
Directions:
1. Mix all the soup stock ingredients together in the bowl that you plan on eating your noodles.
2. Boil the noodles according to the time on the package, and you can drop the Bok Choy in at the last minute to 30-second mark to quickly cook it.
3. Strain the noodles, and remove the required hot water for mixing the soup stock.
4. Mix the hot water into the soup stock, start with 1/2 cup so you can smoothly mix it. Taste to see how rich or light you’d like it to taste. Richer, less water. Lighter, more water.
5. Add the noodles once you’re happy with the taste, pour the meat topping on top, add the Bok Choy, and sprinkle with more sesame seeds and fresh green onions.
